Pauline brings a Caribbean-inflected coastal menu to the ground floor of The Shelborne By Proper on Collins Avenue, serving breakfast, lunch, dinner, and drinks daily. Named after Pauline Baker, wife of cocktail writer Charles H.

Baker Jr., the restaurant draws on Latin citrus, Caribbean spice, and Mediterranean technique applied to fresh local seafood.

Culinary Director Abram Bissell, a Florida Keys native with a background in Michelin-starred kitchens including The Modern, NoMad, and Eleven Madison Park, leads the kitchen. Standouts mentioned repeatedly by guests include the zucchini flower dumplings, lobster sancocho, johnnycakes, and key lime desserts, alongside a raw bar featuring conch ceviche and crudo.

The dining room is bright with soaring windows and natural light, moving from a relaxed morning coffee spot into a lively dinner and cocktail scene by night, with live jazz on select evenings.
